Description
Pasote Blanco comes from NOM 1579, El Pandillo in Jesús María, the highland house of Felipe Camarena and a reference point for additive-free tequila. It is made from the producer's own estate agave and sits among the classic blancos for those who want the plant itself, roasted to draw out its herbal depth and bright citrus aromatics.
The ripe agave is baked and then crushed with a tahona, the volcanic stone wheel that leaves more fibre in contact with the juice. Fermentation runs four to five days on natural yeast alone, followed by double distillation and reduction with a blend of harvested rainwater and spring water. The producer states the spirit is made without glycerin, chemicals or added flavour. The palate is clean and crisp, sharp citrus opening onto pure juicy blue agave, the finish long and dry with a touch of white pepper.
