Description
Pasote Reposado is a 100% Blue Weber tequila produced at El Pandillo, NOM 1579, the Los Altos distillery of fourth generation distiller Felipe Camarena. It is made from estate agave and cut with a blend of harvested rainwater and natural spring water, and the producer works without glycerin, added flavour or chemicals, an additive-free stance.
The agave is baked and crushed with a tahona, fermented four to five days on natural yeast alone, then double distilled. Resting runs six months in American oak bourbon casks reported to be at least forty years old, which builds ripe coconut, sweet American oak and vanilla around the roasted, herbal agave. The palate is supple and warming, the fruity roasted agave meeting fresh floral notes, closing long and clean. Bottled at 40%, it keeps the agave clearly present under gentle wood.
