Description
Pasote comes from El Pandillo, the Jesus Maria distillery of Felipe Camarena under NOM 1579, the same Los Altos house behind G4. This añejo is 100% Felipe Camarena tequila with no additives, the product of estate grown agave and a classic eighteen month maturation in former bourbon whiskey barrels said to be at least forty years old.
The agave is baked and then crushed with a tahona, fermented four to five days on natural yeast alone, and twice distilled in the El Pandillo style known for harvested rainwater blended with spring water. Soft aromas of roasted agave, clean vanilla, sweet coconut and fine oak lead into cooked agave, spice, a rich oak note and fruit like roasted orange peel. The finish is long and warm, deep with toasted, roasted sweet aromas and a fine grained punch of agave underneath.
