Description
123 Organic Tequila marks its añejo with a 3, made by distiller David Ravandi from organically grown lowland agave drawn from the valley of Amatitan in Jalisco. The agave is harvested only after about ten years, when its concentration of inulin and developed sugar is at its highest, and the whole production leans on sustainable touches down to handmade recycled glass bottles and soy ink labels.
Maturation runs eighteen months in small barrels of American white oak that are double toasted, a choice that builds a balanced character. The nose offers vanilla and oak followed by dark, bitter chocolate and sweet ripe peach. The palate opens on sharp white pepper and bright lemon zest before giving way to richly roasted agave and orange marmalade, rich and supple through a pleasant finish that keeps the agave present after a year and a half in wood.
