123 Organic Tequila 1 Blanco is a certified organic 100% Blue Weber blanco built by David Ravandi, co founder of Casa Noble and an early pioneer of French oak in tequila. The agave comes from the lowland valley of Amatitan in Jalisco and is left to grow around ten years before harvest, concentrating the sugars that define the unaged profile.
Produced in the traditional style and bottled unaged, it shows clear, firm aromas of fresh agave and lemon zest, black pepper and a stony minerality. The body is silky and smooth with a long finish and a lightly sweet close. The bottles themselves are handmade from recycled glass and the labels printed on recycled paper with soya ink, in keeping with the brand's organic, low impact approach to lowland Jalisco tequila.
