123 Organic Tequila 2 Reposado is a certified organic 100% Blue Weber reposado from David Ravandi, drawn from lowland agave in the Amatitan valley of Jalisco, harvested after roughly ten years. It is the rested step up from the brand's blanco, built to balance youth and a short stay in wood.
It rests six months in fairly large, only lightly toasted American oak casks, which keeps the barrel gentle and lets a strong agave backbone show. The nose runs herbal and vegetal, with grass, mint and piquillo pepper giving way to marzipan, orange peel, clove and Mexican chocolate. The palate is fresh and agave driven, with a lemony citrus zest, then richer salted caramel and vanilla and a delicate minty finish. Bottles are handmade from recycled glass with recycled paper labels and soya ink.
