Description
123 Organic Diablito is the Extra Añejo of the 123 Organic line, a single estate 100% Blue Weber tequila drawn from one field high in the mountains around Amatitán at roughly 1,800 metres, far above the valley agave that feeds the brand's younger expressions. The agave is left until about ten years before harvest, concentrating its inulin and developed character, and the first 2014 run numbered only a thousand bottles. Bottles and labels are made from recycled glass and paper printed with soy ink.
Forty months in lightly toasted French Limousin white oak shape the spirit while leaving the agave audible. The nose still carries youthful fresh agave with brown sugar, and the palate folds vanilla, agave compote and cinnamon with roasted oak, orange peel and dill. A surprising sesame note lends a halvah like richness that never turns heavy, bottled at 40%, with the high altitude origin giving ripe, concentrated fruit.
