S.B.S Consuelo Single Origin Rum 2023

Denmark's 1423 bottled this Consuelo Single Origin under their transparent S.B.S line, and it breaks the Dominican mould on two counts: it is made from fresh sugar-cane juice rather than molasses, and it is unaged and unsweetened white rum. That puts it closer to an agricole-style cane spirit than to the soft, amber Dominican rons most drinkers expect.

The make is pot-still rum from fresh cane juice, bottled without ageing at a brisk 57% and free of added sugar. The nose is fresh and floral with citrus and pineapple, the palate brings raw sugarcane, a saline edge, spice and citrus, and the finish stays warm and balanced on cane and citrus. At full strength it has plenty of energy and rewards a drop of water or a place in a punchy daiquiri. An honest, vegetal, cane-forward white rum, this is a lively cocktail spirit and a clean-sipping curiosity rather than a sweet, gentle pour.
