Description
This is the Colonne Creole blanc from Clement, the 300 year old estate at Le Francois in Martinique, distilled entirely from fresh-pressed sugar-cane juice rather than molasses. As a white agricole it skips the cask and goes to glass after a short rest, which is exactly the point, leaving the green snap of the cane fully exposed. Under the AOC, no sugar is added, and the listing confirms it pours dry.
The creole column runs deliberately low to keep the grassy, vegetal congeners in the spirit, and the result is a nose of cut cane and earthy spice with a peppery, ginger-edged palate that stays vegetal into a warm, faintly sweet finish. At 49.6% it carries weight without heat, the kind of blanc built for a proper Ti Punch with lime and a little cane syrup, or simply sipped cool to read the terroir straight.
