Daftmill from the distillery, a 13 year old, from 2012, at 46%, 5250 bottles in all. Daftmill is a cult Fife farm distillery, its small releases keenly sought after. Barley is grown on the farm itself, malted nearby, in a true field to bottle approach.
Distilled in a single pair of onion shaped stills on farm well water, giving the delicate, floral Lowland spirit. A bourbon barrel held it, vanilla and a soft citrus over the grassy malt. In integration lactones (coconut) and vanillin (vanilla) knit with the spirit, lemon deepening to honey. Active wood frames the fruit without overwhelming the delicate, grassy spirit. Daftmill's restraint and patience are reckoned a model of the modern Lowland style. Each release is small and quickly allocated, prized by collectors of the new wave of Scotch. Vanillin and oak lactones from the wood lend vanilla and coconut over the floral malt.
At 46% it is gentle, sweet and fruity. Grass, citrus and a gentle vanilla, with a soft vanilla from the oak. It is delicate and fruity, the elegant spirit shining through. The finish runs delicate, grassy and fresh. This is the patient farm malt of Fife.
