Wolfburn The Kylver Series – 4 Cask #325, 326, 808, 819

This is release 4 of Wolfburn's Kylver Series, its single cask bottlings, named Ansuz for a Norse rune. A 3 year old, cask 325, 326, 808, 819, bottled at 50%. Wolfburn is a far north craft distillery at Thurso in Caithness, working by hand since 2013. The new distillery stands some 350 metres from the ruins of the old, sharing the Wolf Burn that gives both their name.

It was worked through the distillery's small copper stills, for a light, citrussy spirit with a sea air lift. A refill bourbon cask held it, keeping the clean character to the fore. Still young, it is fresh and fruity with a coastal lift. The light, clean make takes cask character readily across maturation. The distillery sits among the rugged scenery of Caithness, near the cliffs and beaches of the north coast. Hand filling and hand labelling are still the rule in the warehouses here. A young distillery, Wolfburn has built a following quickly since its first single malt in 2016.

At a natural 50% it is full and lively. Green apple, vanilla and a sea air lift, and the refill bourbon lends a quiet vanilla. A vanilla and a sea air note give it lift. Apple, honey and a sea air lift see out the finish. This is a fresh, maritime far north single malt.
