    Wolfburn Quarter Cask, a single malt from the far north distillery at Thurso, bottled at 54.2%. Just 980 bottles were filled. Wolfburn brought whisky back to Thurso in 2013, reviving a name first raised in 1821 just up the burn. The original Wolfburn was founded in 1821 by William Smith and was once the largest distillery in Caithness, falling silent in the 1860s.

    The spirit was made by hand in copper stills at Thurso, to build a soft, fruity, coastal character. It rested in ex-Bourbon oak for a honeyed sweetness. With no age statement, it shows the light, fresh, fruity character of young Wolfburn. The cool, salt laden far north air works into the dunnage warehouses by the burn. The stills came from Forsyths of Rothes, the most respected still maker in the business. The distillery sits among the rugged scenery of Caithness, near the cliffs and beaches of the north coast.

    Bottled at a cask strength 54.2%, it is intense. A fresh, fruity coastal sweetness, and honeyed vanilla comes through from the ex-Bourbon. Beneath it run apple, citrus and a soft malt. It closes fresh, fruity and clean. This is a light, fresh Highland single malt from the far north.
