Description
Wolfburn Lest We Forget, a single malt from the far north distillery at Thurso, bottled at 46%. Just 1918 bottles were filled. Founded in 2013, Wolfburn is a small, hand run distillery at Thurso in Caithness. The core range runs Northland, Aurora, Morven and Langskip, each named for the far north.
Distilled slowly on soft Wolf Burn water, giving the clean, fruity coastal spirit. It was matured in ex-Bourbon oak, lending vanilla and a soft honey. Without an age statement, it is light, coastal and fruity. The slow loss of the angel's share concentrates the fruity, coastal core over time. Wolfburn distils, matures and bottles all on its one small site at Thurso. The stills came from Forsyths of Rothes, the most respected still maker in the business. The distillery sits among the rugged scenery of Caithness, near the cliffs and beaches of the north coast. Hand filling and hand labelling are still the rule in the warehouses here.
At 46% it is clean and coastal. Apple, citrus and a clean malt, and the ex-Bourbon lends vanilla and a soft honey. A vanilla and a sea air note give it lift. Apple, honey and a sea air lift see out the finish. This is a fresh, maritime far north single malt.
