Description
A Wolfburn single malt, a 4 year old from 2015, cask 709 / 2015, bottled at 55%. Just 324 bottles were filled. Wolfburn is the most northerly distillery on the Scottish mainland, at Thurso in Caithness, where whisky has flowed again since 2013. Most of the make is unpeated, with a lightly peated malt distilled since 2014 for a gentle smoke.
It was worked through the distillery's small copper stills, for a light, citrussy spirit with a sea air lift. It rested in ex-Bourbon oak for a honeyed sweetness. Still young, it is fresh and fruity with a coastal lift. Sea air and active wood together shape the young far north spirit. It is the most northerly distillery on the Scottish mainland, a stop on the North Coast 500. Everything here is done by hand, from milling to bottling, the mark of a true small distillery. Most of the make is unpeated, with a lightly peated malt distilled since 2014 for a soft smoke.
At a hearty 55% it carries real punch. Green apple, vanilla and a sea air lift, and honeyed vanilla comes through from the ex-Bourbon. The mouthfeel is light, the fruit carried on a clean body. A long, fruity finish carries a coastal lift. This is a clean, fruity Highland single malt.
