Description

A Wolfburn single malt, a 6 year old, cask 245 & 465, bottled at 46%. Just 550 bottles were filled. Founded in 2013, Wolfburn is a small, hand run distillery at Thurso in Caithness. The Kylver Series of single casks is named for the runes of an ancient Caithness stone.

The spirit was run through the distillery's one wash and one spirit still, for the light, fresh, maritime make Wolfburn is known for. A sherry butt held it, the wood lending raisin and walnut. Around six to nine years the fruit deepens into honey, apple and a soft spice. The light, clean make takes cask character readily across maturation. The core range runs Northland, Aurora, Morven and Langskip, names drawn from the far north. The Kylver Series gathers single casks named for the runes of an ancient Caithness stone. Water is drawn from the Wolf Burn, the stream that runs past the distillery to the sea. Wolfburn distils, matures and bottles all on its one small site at Thurso.

Reduced to 46%, it is gentle. A crisp, coastal fruit, and sherried dried fruit and a nutty edge come through. Soft orchard fruit and honey sit behind the cask. The close is fresh, fruit over a clean oak. This is the light coastal malt of Thurso.
