Description
Aurora is a core expression of the Wolfburn distillery at Thurso, the most northerly on the Scottish mainland. This release is a 3 year old. It is bottled at 46%. The new distillery stands some 350 metres from the ruins of the old, sharing the Wolf Burn that gives both their name.
It was drawn off a single pair of Forsyths copper stills, for a light, citrussy spirit with a sea air lift. Maturation in a sherry cask laid dried fruit over the coastal fruit. At just a few years old it is bright and fresh, the young coastal spirit to the fore. The cool, salt laden far north air works into the dunnage warehouses by the burn. It is the most northerly distillery on the Scottish mainland, a stop on the North Coast 500. Everything here is done by hand, from milling to bottling, the mark of a true small distillery. Most of the make is unpeated, with a lightly peated malt distilled since 2014 for a soft smoke.
Bottled at 46%, it is rounded. Green apple, vanilla and a sea air lift, and the Oloroso lends raisin, walnut and a dried fruit richness. The texture is light and fresh, the fruit lifted by a coastal salt. The finish runs light, coastal and crisp. This is Wolfburn's clean, coastal Thurso single malt.
