Description
Signatory Vintage, the Edinburgh independent founded in 1988, drew this 17 Year Old, a 2007 vintage from cask 203, an outturn of 674 bottles. Founded in Dufftown in 1823, Mortlach owes its rich, meaty weight to worm-tub condensers and the unusual 2.81 distillation devised by Alexander Cowie.
By seventeen years the meaty spirit had turned rich and oxidative in the Oloroso, raisin, walnut, chocolate and a struck-match savour.
At 56.7% it shows a sherried depth and smoky, undiluted. The savoury Dufftown style.
