    Douglas Laing, bottling single casks from Glasgow since 1948, selected this 12 Year Old: a 2011 vintage from cask DL 17756, an outturn of 361 bottles. Mortlach, owned by John Walker & Sons from 1923, makes a dense, sulphury Speyside through worm tubs and its singular 2.81-times distillation.

    Twelve years in ex-Bourbon let oak meet weight, vanilla and honey from lignin and wood sugars settling over Mortlach's weighty make.

    At 48.4% it shows citrus, a savoury, struck-match note, fresh fruit, old wood and vanilla, undiluted. Mortlach at full weight.
