Ardbeg 21 Years Old (Master of Malt)

Released through Master of Malt's Darkness! programme, the UK online retailer's specialist sherry octave finishing series. Darkness! uses 50 litre ex sherry octave casks (the smallest traditional cask format) to deliver intense secondary maturation across short finishing windows, drawing heavy sherry chemistry into the spirit through the high surface area to volume ratio of the octave format.

Matured at twenty one years before secondary finishing in an ex sherry octave cask and bottling at 40.1% ABV for the German market, non chill filtered with no added colour. The 40.1% reading sits at the legal minimum for Scotch whisky, indicating either substantial ethanol attrition through long maturation or deliberate dilution to standard bottling strength.

The octave finishing format intensifies sherry chemistry transfer during the secondary maturation. Spanish oak polyphenols (gallic acid, ellagic acid), melanoidins from Maillard browning, and rancio sotolon from oxidative sherry ageing transfer rapidly through the small cask format. Layered onto the long matured Ardbeg peat phenols (guaiacol, syringol, 4 methylguaiacol, p cresol) with their established oxidative shift toward leather and tarred rope, the octave sherry finish brings dried orange, almond skin, walnut and bitter chocolate. The Ardbeg purifier ester signature persists beneath as concentrated tropical fruit.
