Description
Distilled by Suntory at its Osaka Prefecture distillery, Japan's first malt site in the humid Shimamoto valley, this 1999 Yamazaki was bottled in 2011 at 12 Years Old for the Japanese market. It is a single cask drawn at full strength, a focused look at the house away from its blended core range.
Maturation took place in a single Oloroso sherry butt, the wood behind Yamazaki's darker register. At 56% it is full but balanced, offering dried fruit and cocoa, a note of dried cherry and warm spice over the distillery's orchard fruit. Well integrated for its years, it shows how active sherry wood shapes the house style into something rich yet still bright, with the orchard fruit holding its own beneath the sherry.
