Description
Volcan De Mi Tierra Tequila Blanco is a 100% Blue Weber blanco at NOM 1523, the single-NOM Jalisco house owned by LVMH and the Gallardo family that makes only Volcan. It is built as a terroir blend, marrying lowland valley agave with highland agave and joining two distillates made by different routes into one bottling.
The lowland agave is cooked in stone ovens, crushed with a tahona, fermented in open wooden tanks with champagne and natural yeasts and twice distilled in pot stills. The highland agave is cooked in autoclaves, milled mechanically, fermented in steel with rum yeasts and likewise twice pot distilled, after which the two spirits are wed and bottled directly. The lowland side gives herbal, citrus and spice notes while the highland side brings cherry and pear, and the palate lands on sweet agave with grapefruit and black pepper at 40%.
