Description
This is a destilado de agave from Macario Partida, a Jalisco maestro who also distils raicilla for the La Venenosa project, made in Zapotitlan de Vadillo from the local Ixtero Amarillo maguey, one of the karwinskii forms grown in the southern Jalisco highlands. It sits outside the mezcal denomination, so it carries the destilado de agave name rather than a category title, bottled joven at 49% to keep the agave forward.
The agave is grown to unusual maturity by the capon method, where the flowering quiote is cut so the plant pours its sugars back into the heart, here given two extra years in the field after fifteen years of growth. Roasted in an underground oven, hand milled with axes, then naturally fermented in wooden tinas with mountain spring water and double distilled in a Filipino style still, it reads of cooked agave, oak, sweet baked apple and damp woodland with a half dry finish.
