Description
Vecindad de Japo Cabo Agave Spirit Chico Amarillo is a small production agave distillate from Cabo Corrientes, a cape on the Pacific coast of Jalisco south of Puerto Vallarta. It is made from Chico Amarillo, an agave that is Agave rhodacantha, the same species as or very close to Mexicano. The distiller was the legendary Hildegardo Joya, known as Don Japo, who produced agave spirits in Cabo Corrientes into his nineties, including bottlings for Mezonte, before passing in early 2025. The brand is a creation of the Santa Sabia distillery in Guadalajara.
The agave here was given the capon treatment, its flowering stalk cut so the plant drives all its sugars back into the heart, then left an extra two years in the field beyond its twelve year maturity. That concentration of sugar yields a fuller, more complex and more powerful spirit, a coastal Jalisco distillate that speaks of both its maker and the rhodacantha agave behind it.
