Description
TU Añejo is a 100% agave tequila contract produced at Casa Maestri, NOM 1438, and built as an unusual terroir blend that draws on both the Jalisco lowlands and higher elevation highland fields. The producer states it carries no artificial additives, and against its own reposado it runs drier and less sweet, with more agave and pepper to the fore.
The two halves are made differently. The lowland agave is cooked in stone hornos, crushed with a tahona, fermented in open wooden tanks on natural yeast and pot distilled twice. The highland agave is cooked in an autoclave, milled mechanically, fermented in stainless steel and pot distilled. The two spirits are married and rested twelve months in ex-bourbon whiskey casks. The nose shows cooked agave, vanilla, dried fruit and chocolate, the palate soft and dry with caramel, lemon, grapefruit and orange over fruity agave.
