Description
C. Dully Selection selected this Tobermory, a 23 year old release from 1995, drawn from cask 3636 and bottled at 46.8%. A release of 295 bottles. Tobermory is the fruity, unpeated side of the only distillery on the Isle of Mull. Its history is famously broken, with long silences; the buildings once held holiday lets and stored cheese.
Drawn off stills with their S shaped lyne arms, for a medium bodied, fruity spirit. Maturation came in ex-Bourbon wood, vanilla under the orchard fruit. Past twenty years the spirit turns honeyed and waxy while keeping its fruit. Long maturation turns the green young spirit towards honey and ripe fruit. Burn Stewart revived production in 1993, and Distell bought the distillery in 2013. The stills carry boil bulbs and a kink in the lyne arms, which lifts the reflux. Water is drawn from a private hill loch, the Gearr Abhainn, above the town.
At 46.8%, undiluted, it is rich and deep. Green apple, citrus and a herbal lift, and ex-Bourbon oak gives vanilla and a light sweetness. The texture is oily and waxy, the fruit threaded through. The finish is deep, waxy and nutty. This is Tobermory's oily, unpeated island single malt.
