Description
Single malt Tobermory, selected and bottled by High Spirits' Collection, a 13 year old release from 2008 and bottled at 46%. Tobermory is the unpeated malt of the island's only distillery, founded in 1798 by John Sinclair. The stills carry boil bulbs and an S shaped kink in the lyne arms, which raises reflux.
Distilled in the kinked copper stills for a fruity spirit, building the oily Tobermory style. It rested in ex-Bourbon oak for a honeyed sweetness. Past a decade the fruit deepens into honey, wax and a riper orchard fruit. The slow loss of the angel's share concentrates the fruity, waxy core over time. The distillery was refurbished and its stills renewed between 2017 and 2019. Mull's maritime climate works into the maturing casks over the years. It is one of the oldest commercial distilleries in Scotland still working. Tobermory has distilled in the island's harbour town since 1798.
Bottled at 46%, it is rounded. Honey, wax and a soft nut, and the ex-Bourbon lends vanilla and a soft honey. It is fruity and full, the oily spirit shining through. It finishes fruity, oily and warming. This is an unpeated malt from Mull's only distillery.
