Description
Bottled by The Whisky Cask, this Tobermory, an 11 year old release from 2008 and bottled at 63.8%. Tobermory is the unpeated malt of the island's only distillery, founded in 1798 by John Sinclair. The distillery makes two malts: the unpeated Tobermory and the peated Ledaig.
It was worked through the boil ball stills for an oily, fruity make, for the waxy, fruity spirit Tobermory is known for. Maturation in sherry laid dried fruit over the fruit. At this age the spirit is fresh and fruity, the wax and a green note bright. Refill oak lets the fruity, waxy Tobermory character lead. Its painted home town gives the unpeated malt its name. A rare, more heavily peated make has appeared under the name Iona, after a neighbouring isle. In dry summers the distillery has paused when its hill loch ran low. The distillery sits at the head of the bay, beneath a steep wooded hill. Both malts feed the Scottish Leader and Black Bottle blends as well as single malt.
At a natural 63.8% it is bold and full. A fruity, waxy sweetness, and the Oloroso brings dried fruit, fig and a nutty depth. A baked apple and a nutty note lift it. A long, oily finish ends on orchard fruit. This is a waxy, fruity island single malt.
