Description
Tapatio is the Camarena family's domestic-rooted highland brand, made by Carlos Camarena at La Alteña in Arandas, Jalisco, the Los Altos house from which El Tesoro and Ocho descend. This is a 100% Blue Weber agave blanco, crushed on the volcanic stone tahona that gives the line its rounder, more textural body, and made in the producer additive-free style the house is known for.
After distillation it rests about a month in steel tanks rather than going straight to bottle, which softens it without adding oak. The tahona crush and highland agave show in a savoury, spicy profile: cooked agave, damp earth, anise, clove, mint and pepper, with a touch of citrus and white chocolate stretching a surprisingly long finish. Rustic, peppery and full flavoured, it is bottled at 40%.
