Ron Zacapa is a Guatemalan rum from Industrias Licoreras de Guatemala, distinctive for its base of sugar cane honey, concentrated first-press cane juice rather than the usual molasses, which carries more aromatic compounds into the spirit. It is matured in a solera, a fractional blending system borrowed from sherry where older and younger rums marry over time, at a cellar high in the mountains where cool, stable air slows the ageing.
The number on a solera bottle refers to the oldest component in the system rather than a fixed age, so this is best read as a solera blend rather than a single age statement. In the glass it runs to honeyed caramel, vanilla, raisined fruit and a gentle oak spice on the finish. It is a sweetened rum and drinks smooth and rounded, an easy after-dinner or gift bottle.
