Description
La DOMA, the Taming Cask, is a 2020 release in Ron Zacapa's Heavenly Cask Collection from Industrias Licoreras de Guatemala. Like the rest of the Zacapa line it is made from cane honey, the miel de cana base rather than molasses, and assembled by solera at high altitude, so the number on a standard Zacapa label always points to the oldest component, not an age.
Distilled on a column still and married in the highland solera, it shows vanilla, raisin and banana on the nose, a fruity palate of banana, pineapple and honey, and a finish of sweet raisin, vanilla and oak. It comes across as fruit-forward and, for a Zacapa, not overly sweet, with tropical fruit and a touch of chocolate carrying the drink. It is a soft, polished after-dinner pour, sitting in the familiar Zacapa comfort zone with a slightly lighter hand on the sugar.
