Description
Ocho Plata Las Raíces 2024 is a 100% Blue Weber agave blanco produced at the Camarena family's Tequila Ocho house in the Los Altos highlands of Jalisco, at NOM 1474. Ocho pioneered single estate, vintage dated tequila with the late Tomás Estes, naming the specific rancho and the year, so each release reads as the character of one field. Las Raíces sits on a south facing slope at 2,180 metres on the iron rich red clay typical of the highlands.
The agave from this estate carried a sugar content around 32% with piñas averaging 55 pounds, the concentration that comes from full ripening at altitude. Cooked in brick ovens and bottled unaged and additive-free, the spirit shows the fresh, fruit forward highland register: green pineapple, lime zest and green apple over a savoury base, with black pepper, rosemary and a touch of earth giving it grip. Bottled at 40%.
