Description
Noble Coyote Mezcal Espadin is a joven from Oaxaca, where the family producer works between San Luis Amatlan and Santiago Matatlan. The name pairs a Greek root for agave with a Nahuatl word, and the bottling sits within a wider range that runs from ensambles to single wild agave releases. Built from cultivated Espadin, it is the accessible, herb forward entry to the house.
Made in the artesanal manner with pit roasting behind it, the mezcal carries fresh green aromas followed by anise and subtle smoke. The palate keeps those bright herbal notes and resolves into a soft, fruity and medium length finish, with tropical fruit, pepper, eucalyptus and ginger giving it lift. Sustainability runs through the production, from labels made of recycled agave fibre to bagasse turned into fuel for the roasting ovens and rainwater used for cooling, all of which keeps the focus on the plant itself.
