Description
Noble Coyote Mezcal Ensamble is an Oaxacan mezcal joining Espadín with the wild Jabalí agave, made by maestro mezcalero José Santiago. Jabalí, named for the wild boar, is among the most difficult agaves to distil because it foams violently and runs low in sugar, so it needs three to four distillations, a knowledge only a few makers hold. The brand name reads as a homage to the agave itself.
The two species are roasted, fermented and distilled together as an ensamble, with the extra distillation rounds smoothing the spirit into an elegant, soft finish. The herbal nose carries a subtle smoky note, while the palate opens with slate, mint, toffee and oriental spice over a mineral undertone. At 45% it holds the proof that lets both agaves speak, the espadín lending balanced sweetness and the jabalí its herbal, fruity lift.
