Description
Noble Coyote Ensamble joins ten year old Espadín with fifteen year old Tobalá, two magueyes cooked and distilled together to balance Espadín's sweet body against the floral mineral lift of wild Tobalá. The Tobalá, often called the king of agaves, grows slowly in shaded rocky ground between 1,200 and 2,300 metres, which lends the ensamble its delicacy. Noble Coyote is made in San Luis Amatlán and Santiago Matatlán in Oaxaca.
This is an artesanal joven, pit roasted and bottled unaged at 45% to keep the agave forward. Tropical fruit leads the nose, mango and papaya beside pleasant roasting smoke, while the palate turns to freshly ground pepper, honey, lemon sorbet, eucalyptus and a tingle of ginger. The producer leans on sustainability, recycling bagasse into biofuel and clay bricks and using collected rainwater for cooling.
