Signatory Vintage, the Edinburgh independent founded in 1988, bottles this 7 Year Old, a 2013 from a small parcel of casks, an outturn of 905 bottles. Mortlach is the Speyside outlier known as the Beast of Dufftown, its worm tubs and 2.81 distillation building a dense, sulphury, meaty spirit.

Seven years in a bourbon cask kept Mortlach's weighty make bold and spirit-led, low-tannin oak lending vanilla over the savoury core.
