Signatory Vintage, the Edinburgh independent founded in 1988, drew this 27 Year Old, a 1991 from cask 4239, an outturn of 542 bottles. Mortlach, long the muscular heart of the Johnnie Walker blends, draws its meaty depth from low-copper worm tubs and a 2.81-times distillation regime.

Across twenty-seven years the Oloroso and a slow angel's share concentrated the robust Mortlach spirit into stewed dried fruit, chocolate and a leathery depth.

At 51.7% it shows dried fruit, chocolate, a savoury, struck-match note, a nutty depth, old wood and a sherried weight, undiluted. A meaty, muscular Mortlach.
