From Signatory Vintage, the Edinburgh independent founded in 1988, this 25 Year Old is a 1991 from cask 4243, an outturn of 594 bottles. Mortlach is Speyside's great meaty malt, its 1823 Dufftown stillhouse using worm tubs and a 2.81 distillation that defies the region's lighter norm.

Across twenty-five years the Oloroso and a slow angel's share concentrated the robust Mortlach spirit into stewed dried fruit, chocolate and a leathery depth.

At 56.3% it shows fresh oak and tobacco, undiluted. A bold, sherried Mortlach.
