From Signatory Vintage, one of Scotland's largest independent bottlers, this 20 Year Old is a 1991 vintage from cask 7705, an outturn of 779 bottles. Mortlach, owned by John Walker & Sons from 1923, makes a dense, sulphury Speyside through worm tubs and its singular 2.81-times distillation.

Across twenty years the sherry's melanoidins and growing oxidation built dried fruit, nutmeg and leather into the gamey, savoury spirit.
