Mortlach 15 Years Old 2007 Cask #5 (Signatory Vintage)

Signatory Vintage, the Edinburgh independent founded in 1988, drew this 15 Year Old, a 2007 vintage, cask 5, an outturn of 686 bottles. Mortlach, the Beast of Dufftown, condenses its spirit in worm tubs and part-triple-distils through the tiny Wee Witchie still, building weight and a savoury, sulphury core.

Across fifteen years the sherry's melanoidins and growing oxidation built dried fruit, nutmeg and leather into the heavy, sulphury make.

At 51.8% it shows chocolate, malt extract, fresh oak and a sherried depth, undiluted. Big, savoury and full-bodied.
