Description
Mezcal Amaras Cupreata is a joven from Guerrero, made entirely from wild Cupreata (Agave cupreata) harvested on the slopes of the Rio Balsas basin between 1200 and 1500 metres, where the harsh climate stretches the plant to around thirteen years before it matures. Amaras is a sustainability led house known for its replanting programme and large agave nurseries, and Cupreata is the agave that gives Guerrero and Michoacan mezcal its fruity, earthy signature.
The fermentation is done in the open air on native yeast, and the spirit is distilled twice in copper. The result is bold and bright, with aromas of leather, cocoa and roasted pumpkin seed, then a savoury, herbaceous palate of green pepper and spice. It finishes on fresh peel and a mild peppery warmth, a richer, more herbal counterpoint to a straightforward espadin and a clear window into what wild agave can carry.
