Phil and Simon Thompson, the brothers behind the Dornoch distillery and their Thompson Bros bottlings, select this 11 Year Old, a 2011 vintage Longmorn in ex-Bourbon, an outturn of 458 bottles.

Eleven years in ex-Bourbon framed the young make, the oak's caramelised hemicellulose giving a soft toffee alongside vanilla and a nutty depth.

At 53.5% it shows a nutty note, cooked and fresh fruit, a malty depth, new wood and vanilla over Longmorn's body, undiluted. A Thompson Bros 11.
