Description
A 12 year old Dailuaine from the Adelphi bottler, from cask Batch 3, bottled at 46%, one of 1420 bottles. Dailuaine is a rich, meaty Speyside single malt from the banks of the Spey near Aberlour. It sits near Aberlour, in the heart of Speyside by the River Spey.
Drawn off three wash and three spirit stills, giving the heavy, meaty spirit at its heart. Ex-Sherry wood added a deep dried fruit richness to the full bodied malt. In integration lactones (coconut) and vanillin (vanilla) knit with the malt, fruit deepening to dried fruit. The clean spirit shows the cask clearly, vanilla and fruit over a rich malt. Water comes from the Bailliemullich Burn, the spirit drawn off three wash and three spirit stills. The rich, full bodied spirit takes cask flavour well, especially sherry wood. The cool Speyside air gives a slow, even maturation, the heavy malt deepening.
At 46% it is smooth and honeyed. Orchard fruit, malt and a warm spice, with dried fruit, fig and walnut from the cask. A baked fruit and a warm spice lift it. Dried fruit, malt and a savoury oak see out the finish. This is a rich, malty Speyside single malt.
