This 31 Years Old is a Lagavulin Cask of Distinction, distilled in 1991 and drawn from ex-Bourbon cask 6498, an outturn of 213 bottles. Founded in 1816, Lagavulin sits among the famous trio of southern Islay distilleries.
A long, slow distillation through onion-shaped stills shapes the peated make. Matured in a single ex-Bourbon cask at full strength, three decades soften the smoke into a waxy maturity.
At cask strength, 45.6%. Guaiacol and other phenols carry a mellowed smoke, the ex-Bourbon giving vanilla over a waxy, aged depth. A rare old Cask of Distinction Lagavulin.
