La Serpiente Emplumada, the feathered serpent of Aztec myth tied to Quetzalcoatl, is a Jalisco tequila brand working from 100% Blue Weber agave. This anejo, like its blanco and reposado siblings, draws on a mix of agave cooked in fast autoclaves and agave cooked slowly in stone ovens, fermented carefully and then double distilled. It carries no added flavourings according to the producer, and the line is built on classic, recognisable tequila character.
As an anejo it has rested at least thirteen months in barrels of American white oak, which gives it amber depth. The aroma is layered, with agave, honey and beeswax alongside lime, bergamot, spiced chocolate, fig, orange peel and walnut, while the palate turns to baking spice, candied fruit and ginger. The finish is lively and elegant with notes of baked banana and roasted fruit, the oak sitting as a partner to the cooked highland agave rather than burying it.
