Chapter 7 bottled this 2006 Knockdhu from ex-Bourbon cask 6 for its Monologue anthology, a 16 year old, an outturn of 334 bottles. The distillery at Knock, in Banffshire sells its malt as anCnoc; bottlers like this use the Knockdhu name. This cask shows a peated side of the distillery's output.
Since its 1989 revival under Inver House, the distillery has run the odd peated batch. Matured in a single ex-Bourbon cask over sixteen years, the oak build a rounded, vanilla-rich character with soft oak.
Cask strength, 51.5%. The ex-Bourbon gives vanilla while peat phenols add smoke. Tasting notes take in a leathery note, a malt extract edge, smoke, chocolate, citrus and a hay-like note. A peated independent single cask.
