Description
The Cuvee Du Maitre de Chai from HSE, the Habitation Saint-Etienne in Martinique, distilled at the Distillerie du Simon. As an AOC agricole it is fresh-pressed cane juice with no added sugar, column distilled and bottled unsweetened at 42%, a blend showing both youthful cane and a touch of oak polish.
The profile sits between a young blanc and an aged vieux. The nose is grassy and green with sugar cane, licorice and a fruitcake note, and the palate keeps that vegetal, grassy core with a slightly bitter young-wood edge. The finish is where the oak speaks, turning woody with vanilla, caramel and a sweet impression. The cask influence is present without being overbearing, rounding the green agricole character while leaving its freshness intact. Genuinely dry and unsweetened, and impressively intense for its modest strength, it is an honest, balanced agricole that drinks well neat or in a Ti' Punch.
