Description
This official GlenAllachie, an 11 year old, from 2014, at 57.8%. GlenAllachie is a Speyside single malt known for its heavy sherry and wine cask maturation. It was built by Mackinlay McPherson, the firm that supplied whisky to Shackleton's 1907 expedition. It was founded in 1967, designed by the architect William Delme Evans, his fourth distillery after Jura and Tullibardine. It matures its spirit in sixteen dunnage warehouses on the distillery site at Aberlour.
It was distilled to a full, generous cut, for a thick, ester rich spirit the casks then deepen. A Pedro Ximenez cask held it, drawing the rich spirit on over the years. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time.
Bottled at a cask strength 57.8%, it is deep and concentrated. Baked apple, honey and a dark chocolate, with raisin, date and treacle from the cask. A baked apple and a warm cinnamon lift the middle. A deep finish ends on dried fruit and a dark chocolate. This is a deep, sherried Speyside single malt.
