    This GlenAllachie was bottled by That Boutique-y Whisky Company, a 10 year old, at 54.2%. A rich, sherried malt of date, fig and a warm cinnamon, with raisin, date and treacle from the cask. Founded in 1967 below Ben Rinnes near Aberlour, in Speyside. Built by Mackinlay McPherson, the firm that supplied Shackleton’s 1907 expedition. This is a Speyside single malt of real standing.

    A GlenAllachie of a 10 year old chosen by That Boutique-y Whisky Company, distilled in 2011, at 54.2%, one of 257 bottles. GlenAllachie is a Speyside single malt, long a blending malt and now a sherry led name in its own right. It was designed almost entirely gravity fed, an efficient plant for its time. Under Walker it turned to single malt, with heavy maturation in sherry and wine casks. Its stills were doubled from two to four within months of opening, the lyne arms angled down for a fuller spirit.

    Taken gently through wash and spirit stills, building a deep malt of dried fruit and dark sugar. Maturation came in a Pedro Ximenez cask, layered over the full GlenAllachie make. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. Maturation runs slow and even in the on site dunnage warehouses at Aberlour.

    At its natural 54.2% it is rich and chewy. Baked apple, honey and a dark chocolate, with raisin, date and treacle from the cask. A dark chocolate and a soft oak give it weight. The finish runs long, full and warming. This is GlenAllachie's deep, fruity Speyside style.
