    An official GlenAllachie, a 15 year old, 2004, at 56.7%. A deep, dark malt over a full, rich body, with dried fruit, fig and walnut from the cask. Built by Mackinlay McPherson, the firm that supplied Shackleton’s 1907 expedition. Revived in 2017 by master distiller Billy Walker, it now leads with single malt. This is GlenAllachie’s deep, fruity Speyside style.

    This official GlenAllachie, a 15 year old, from 2004, cask 6213, at 56.7%, 354 bottles in all. GlenAllachie is a Speyside single malt, founded in 1967 below Ben Rinnes near Aberlour. Under Walker it turned to single malt, with heavy maturation in sherry and wine casks. It was built by Mackinlay McPherson, the firm that supplied whisky to Shackleton's 1907 expedition. It was bought in 2017 by Billy Walker and two partners, fresh from selling BenRiach, GlenDronach and Glenglassaugh.

    It was worked unhurried through the stillhouse, giving a full bodied Speyside spirit. It was matured in an Oloroso cask, the wood working deep into the malt. Into oxidative maturity, slow air builds ripe esters and a darker chocolate, fig and date depth. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit. The wood frames the spirit without ever stripping the full Speyside body.

    At 56.7%, undiluted, it is dark and full. Date, fig and a warm cinnamon, with dried fruit, fig and walnut from the cask. It is full and fruity, the spirit carrying the cask. A deep finish ends on dried fruit and a dark chocolate. This is the sherry led malt of Aberlour.
