Description
A distillery release of GlenAllachie, a 12 year old, from 2007, cask 4573, at 61.2%, 704 bottles in all. GlenAllachie is a Speyside single malt, revived in 2017 by the team of Billy Walker. It was built by Mackinlay McPherson, the firm that supplied whisky to Shackleton's 1907 expedition. Its stills were doubled from two to four within months of opening, the lyne arms angled down for a fuller spirit.
The spirit was drawn from a thick, full bodied wash, giving a full bodied Speyside spirit. It was fully matured in an Oloroso cask, the wood deep in the rich spirit. By the integrating teens the raw notes fade and esters build, the rich spirit growing rounder and darker. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate. The wood frames the spirit without ever stripping the full Speyside body. Maturation runs slow and even in the on site dunnage warehouses at Aberlour.
At its natural 61.2% it is rich and chewy. Orange, raisin and a treacle edge, with dried fruit, fig and walnut from the cask. A baked apple and a warm cinnamon lift the middle. The finish runs long, full and warming. This is a rich, sherried Speyside single malt.
